Picture this: It’s a bright but frosty mid-March morning and you’re walking through the countryside of Quebec. You walk down a smaller trail taking in the beautiful scenery, and then you start to smell it: the unmistakable, sweet scent of boiling maple syrup. You see people crowding into a small cabin to get a taste of freshly made maple toffee, or pancakes topped with fresh maple syrup.
